Kathrikkai Koottu / Brinjal Koottu Recipe

Kathrikkai / Brinajl is an excellent vegetable for weight watchers. It also helps to control high blood cholesterol. It helps prevent cancer and is rich in manganese, potassium, copper and iron. Because of the potassium content, it is good to have in summer to counter electrolyte imbalances which is very common in summer season. Kathrikkai Koottu / Brinjal koottu goes very well with rasam rice. If  you have not tried this, then do so now. My family likes brinjal in any form, koottu, curry, bajji, gotsu. Name it and we will have it. :-)

Preparation Time : 15 minutes
Cooking Time : 25 minutes
Serves : 4

Ingredients

Small Purple brinjal (Kathrikkai)/ Green Long brinjal - 500gms (approximately 12 - 15 pieces)
Salt - To taste
Turmeric - a pinch
Moong / Masoor Dal - 3 tbsp

For Seasoning

Ghee - 2 tbsp
Mustard - 1 tsp
Urad Dal - 1/2 tsp
Curry leaves - a few
Asafoetida - 1/2 tsp

For Grinding

Green Chillies - 4 / 5
Coconut - 5 tbsp
Cumin seeds - 1/2 tbsp

Procedure

1. Cut the crown, and chop the kathrikkai / brinjal into 1/2" pieces.
2. Pressure cook the dal and set aside
3. Grind the items given under (For grinding) into a smooth paste.
4. Pressure cook the brinjal with salt and turmeric powder.
5. To the cooked brinjal, add the ground paste and the dal and some more water if required, to suit your consistency preference and allow to boil
6. Finally, heat ghee in a pan, when hot, add the mustard, urad dal, curry leaves and asafoetida
7. Kathrikkai Koottu is ready. Mix well and serve with sambar rice / rasam rice / vathalkuzhambu.
