Vegetable Muffins

These vegetable muffins are easy and quick to make and great as an evening snack or for your kids box. Try this and let me know. The additions are completely left to you. I have given veggies that I have added. You could go ahead and make any improvisations




Preparation Time : 20 minutes
Baking Time : 30 minutes
Makes 6 muffins

Ingredients

Maida / All purpose flour - 1/2 cup
Oats - Half of 1/4 cup
Wheat Flour - Half of 1/4 cup
Baking Soda - 1/4 tsp
Baking Powder - 1/2 tsp
Salt - to taste

Oil - 1/3 cup
Curd - 1/2 cup
Vegetables - 1/3 cup chopped / grated (Carrot, onion, capsicum)
Cheese - 3 to 4 tbsp (mozzarella / parmesan / cheddar / plain processed cheese) [You can set aside a little cheese to top the muffins before placing in the oven]

Procedure

1. Preheat oven to 200 C.
2. Mix all the dry ingredients together in a bowl
3. Combine and whisk the oil and curd together.
4. Add the vegetables and cheese to the curd mix
5. Mix the dry and wet ingredients together. The batter will be slightly sticky and you will have to spoon it into the muffin tin.
6. Pour into lined muffin tin and place in the oven for baking.
7. Check after about 25 minutes till a toothpick comes out clean.
8. Delicious vegetable muffins are ready.

Notes :

1. You could add some chopped coriander / green chillies / chilli flakes / garlic / Ginger etc. Options are unlimited. You could also mash and add some green peas, cauliflower. However make sure to adjust the proportions of the other ingredients accordingly.
