Aloo Paratha



Aloo Paratha is my brother's favourite. We could make it everyday and he will have it. That is how much he loves it. My mom makes brilliant aloo parathas. I love the way it comes out perfect, clean and without breaking. Lets proceed to the recipe.

Preparation Time : 10 minutes
Cooking Time : 25 - 30 minutes

Ingredients

For the dough

Atta - 2 cups
Salt - to taste
Ghee - 1/2 tsp
Water

For the stuffing

Potatoes - 7 medium sized
Chillies - 5
Ginger - 2 " piece
Coriander - 2 tbsp
Salt - to taste

For Seasoning 

Oil - 2 tbsp
Jeera / Cumin - 1 tsp
Mustard Seeds - 1 tsp
Turmeric Powder - 1/2 tsp

Procedure




1. Mix the ingredients for the dough and set aside.
2. Boil the potatoes and peel them.
3. Mash the potatoes well and set aside.
4. Grind together the ginger, green chillies, coriander
5. Heat oil in a kadai, add mustard, jeera and let them splutter.
6. Add the turmeric powder and the ground paste and mix well.
7. Finally add the mashed potatoes and give a good mix.
8. Add salt to taste and make sure you mix it evenly.
9. Allow the mix to cool and make small balls.
10. Make small balls of the dough.
11. Take a small ball of the dough, roll it evenly into a 2" circle
12. Place the potato mix ball in the center of the flattened dough.
13. Pull the dough over the stuffing and cover it properly. Make sure the stuffing does not come out.
14. Start rolling the dough again into an even circle.
15. Toast over a tava with a little oil till brown on both sides evenly.
