Cream of Broccoli Soup







This healthy cream of broccoli soup is a lovely greeny soup and tastes lovely with garlic bread

Preparation Time : 10 minutes
Cooking Time : 20 minutes
Serves : 3

Ingredients

Broccoli - 1 medium, broken into bite size florets
Onion - 1 small
Water - 21/2 cups
Salt - to taste
Pepper Powder - to taste
Milk / Cream - 1/4 cup
Maida - 1 tbsp
Water - 2 tbsp
Oil - 1 tbsp

Procedure

1. Boil water in a pot with salt.
2. In a pan, add oil, saute the onions till soft and translucent without burning them
3. When the pot of water boils, add the broccoli florets and cook till just tender.
4. Puree the onion and broccoli till smooth using a mixer / hand blender
5. Transfer the puree to a pot, with 21/2 cups water
6. Add salt, pepper to taste.
7. Make a slurry of the maida and water
8. When the soup boils, add the maida slurry and keep stirring till the soup thickens
9. Finally, just before turning off, add some warm milk / cream.
10. Give a quick stir and turn off the flame.
11. Serve hot with garlic bread
