Eggless Caramel Pudding

Preparation Time : 10 minutes
Cooking Time : 30 minutes

Ingredients

Full cream milk - 1 1/4 lt
Sugar - 120 gm
Custard Powder - 3 tbsp
Agar - Agar powder - 2 tbsp
Sugar - 3/4 cup
Water - 3 tbsp

Procedure

1. To make the caramel, combine sugar and water and place the vessel on a low flame.
2. Stir till the sugar dissolves.
3. Increase the flame to a medium high and let the mixture boil. Do not disturb it except for an occasional stir.
4. Switch off the stove when the mixture turns a deep amber color.
5. Transfer to a pudding bowl.
6. Mix the custard powder, agar-agar, 5 tbsp milk into a paste
7. Boil the remaining milk with sugar till it boils
8. Add the milk, custard paste to the boiling milk and continue to cook on a low flame till it coats a spoon
9. Pour over the caramel and allow to cool to room temperature
10. Set in the refrigerator to chill overnight
11. Delicious egg-less caramel pudding is ready.
