Mushroom Salt N Pepper

This absolutely simple recipe is a favourite in our place. Being huge fans of mushrooms, we cook them so often. Soups, starters, this vegetable lends itself so well to fit into any recipe. The softness of mushrooms combined with the spiciness of pepper makes it so stimulating.

Preparation Time : 10 minutes
Cooking Time : 15 minutes
Serves : 2

Ingredients

Button Mushrooms - 1 box / 200 gm, chopped into four, stems removed
Onion - 1 large
Green Chilli - half / 1 small
Spring Onion greens - 2 tbsp, finely chopped
Garlic - 2 cloves, chopped
Salt - to taste
Freshly Crushed Pepper  - 1 tbsp
Curry Leaves - a few
Oil - 1/2 tbsp
Cumin - 1 tsp

Procedure

1. Heat oil in a pan, when the oil is hot, add cumin.
2. When the cumin turns slightly brown, add the onions, garlic, spring onion greens, and chilli
3. Cook on a low flame till the onions turn translucent.
4. Add the mushrooms and turn the flame to a high and continue to cook stirring in between till the mushrooms are cooked and there is no water.
5. Finally add the crushed pepper, curry leaves and salt to taste.

Notes:

You can make the same recipe with baby corns, coloured peppers too. I tried this version also yesterday and it was amazing. The number of vegetables you decide to add is up to you. The more the tastier. :))
