Scottish Shortbread

Most of the people who have tasted shortbread would have had the WORLD famous WALKER's shortbread. I love these shortbreads too and had been wanting to try them. So all of a sudden I found this recipe and Lol ! the results were amazing. Exactly same in taste and texture, just that it needs careful handling

So here we go to the recipe

Preparation Time : 10 minutes
Cooking Time : 45 minutes - 1 hour

Ingredients

Butter - 225 gm
Salt - a pinch
Castor Sugar - 110 gm + extra for sprinkling (optional)
Maida - 225 gm
Cornflour - 100 gm

Procedure

1. Preheat oven to 170 C
2. In a large bowl, cream butter, salt and sugar until light and fluffy and pale in color (approximately 10 minutes using a mixer)
3.  Sieve maida and cornflour together and add into the butter mix
4. Mix quickly and thoroughly to bring the ingredients together. Don't over mix
5. Tip on to a floured surface and knead lightly and quickly to form a loose dough
6. Divide the dough into two halves.
7. Roll out one half of the dough in between two sheets of butter paper into a rectangle of 1 cm  thickness
8. You can cut into any shape / shortbread sticks using a knife.
9. Prick the surface of each cut cookie using a fork.
10. Place carefully on the baking sheet and bake for 25 minutes
11. Sprinkle warm shortbread with castor sugar and allow to cool on a wire rack.
12. Repeat steps 7 - 11 for the other half of the dough and your huge batch of shortbread cookies is ready
