Mixed flour Ginger Cookies

Preparation Time : 20 minutes
Cooking time : 20 minutes
Makes 20 cookies

Ingredients

Maida / All purpose flour - 1/2 cup
Atta / Wheat Flour - 1/2 cup
Dry Ginger Powder - 1/2 tbsp
Baking Soda - 1/2 tsp
Cinnamon Powder - 1/4 tsp
Salt - 1/4 tsp
Sugar - 1/4 cup
Vegetable Shortening (Crisco) - 3 tbsp
Egg - 1/2 a large egg (1/2 white and 1/2 yolk)
Jaggery - 1/2 cup

Procedure

1. In a large bowl, combine maida, atta, ginger powder, soda, salt and cinnamon powder
2. In a mixing bowl, with the mixer on low speed, beat sugar and shortening till mixed well.
3. Increase the speed to high and beat till creamy
4. Add the egg and jaggery and continue on high
5. Finally add the dry ingredients mix, reduce speed to low and make a soft dough
6. Cover the dough and refrigerate for an hour
7. Preheat oven to 180 C
8. Shape the dough into balls and place them apart on an ungreased baking tray to avoid sticking
9. Bake  for 12 minutes / till the tops are slightly cracked
10. Cool the cookies completely
11. These cookies can be stored for 1 month in freezer.
