Jeera Rice with rajma is my husband's favourite. The rice bursting with the flavor of jeera / cumin is too difficult to resist. The flavor of ghee in the jeera rice is what makes this very special.
Preparation Time : 15 minutes
Cooking Time : 30 minutes
Serves : 2
Ingredients
Basmati Rice - 11/2 cups
Onion - 1, sliced finely
Cumin / Jeera - 1 1/2 tbsp
Salt - to taste
Pepper - 1 tsp
Green Chillli - 3, slit, vertically
Cinnamon - 1" piece
Ghee - 4 tbsp
Coriander - 2 tbsp, chopped finely
Water - 3 cups
Procedure
1. Soak the basmati rice for half hour.
2. Heat the ghee in a kadai, add the pepper, cumin, green chilli, cinnamon and saute till the strong aroma of cumin comes.
3. Add the onions and saute till slightly browned.
4. Add the soaked and drained basmati rice to the onions and saute well.
5. Finally add water, salt and pressure cook jeera rice for three whistles.
6. When the rice is ready, fork up the rice and add the chopped coriander.
