Vazhaithandu Methi Curry

Vazhaithandu is rich in fibre. It is considered to be good to treat kidney stones. I make this very often. Vazhaithandu methi curry has a very strong flavour of methi's and is very healthy too.  I use home grown methi for this curry. It is very easy to grow methi at home. Take a long pot with some good soil, sow some methi seeds, water it everyday and you can take the methi for use in one week.

Serves : 2

Ingredients

Vazhaithandu - 1 big
Moong Dal - 1/4 cup
Methi - 1 cup chopped
Coconut - 6 tbsp

To Temper

Mustard - 1 tsp
Red Chilli - 3
Cumin - 1/2 tsp
Curry Leaves - a few chopped
Asafoetida - 1/2 tsp
Turmeric - 1/2 tsp
Oil - 1 tbsp

Procedure

1. Wash well, remove fibre from vazhaithandu and chop finely. Soak it in buttermilk.
2. Wash the methi leaves very well and chop finely.
3. Soak the moong dal in warm water
4. Pressure cook the vazhaithandu for two whistles with salt. Drain and set aside.
5. Heat oil in a kadai, add mustard, let it splutter, add cumin seeds, let it brown, add red chillies, curry leaves, turmeric and asafoetida.
6. Add the vazhaithandu and the chopped methi, cover and cook till the methi leaves are cooked.
7. Finally add the drained moong dal and continue to cook for 3 minutes.
8. Add the coconut and serve with rice and sambar
